Graduation Cupcakes for the Haas Family!

Tina Haas who I am going to miss dearly at Wisdom Beverage is moving to Virginia with her family as soon as she they can find a house to buy! Her oldest, Alexis just graduated from High School and will be attending James Madison University this Fall.  Tina and Chris (my former General Manager at Wisdom) were planning on throwing Alexis a graduation party… and guess what they needed?

CUPCAKES!

image

Cookies and Cream with marshmallow filling and Cookies and Cream buttercream frosting topped with 2012s and little graduation caps!

image

Alexis really wanted leopard or zebra print AND Tina wanted a special cake just for Alexis… Panther Creek High School’s colors are also black and light blue, sooo… let’s put that together!

image

image

Cookies and Cream cake just for Alexis followed by Sea Salt Caramel Chocolate cupcakes topped with little black and light blue graduation caps.

image

image

I dropped off the cake and cupcakes to the Haas’ house that afternoon and set up everything for Tina.  She was running around like a crazy person a few minutes before the party started, so I thought it would help her out.  I was able to catch up with Chris and another old co-worker, Chris Watson while arranging cupcakes.

And, I know that I’m a straight PSYCHO before guests arrive when we’re hosting, so I hung around and made sure the stand looked great.

image

image

Yum!  Tina sent me a very sweet text message later that day saying that the cupcakes and cake were a huge hit!  Haas Family, thank you again for inviting me to be a part of your special celebration.  Congratulations Alexis!  Good luck at JMU.

XOXO

Girls on the Run - Cupcake Donation!

image

Girls on the Run (http://www.gotrtriangle.org) is such a cool non-profit organization for young girls to inspire them to be joyful, healthy, and confident. I have two amazing women in my life, Megan McClure and Tracie Rodriguez that have each supported and volunteered for this international group.

Tracie was a Triangle Coach last year giving several hours a week to help train 8-12 year olds to prepare for a 3.1 mile run. She not only helped teach these girls how to run, but also provided a healthy way to live their lives through team building and uplifting workouts, etc. Check out her blog here:  http://runworkeatsleep.wordpress.com/ She’s a motivation to so many people including myself!

Megan has been volunteering with Girls on the Run’s Alamance County chapter. They don’t have a group of girls that meet every week, but they provide support to the other major cities - Raleigh, Durham, and Orange County’s 5K races. Megan’s main focus is marketing and recently she invited me to participate in an auction at Sip! A Wine Store in Cary:  http://www.sipawinestore.com/ Megan is quite the busy lady that still makes sure she puts time aside for Alamance County events and good causes. They are lucky to have her consistently supporting the area!

I donated 2 dozen cupcakes for the raffle prizes and enjoyed a fabulous evening! I even had a friend win the raffle! It felt good to donate my time and cupcakes to such a great cause.

Thank you Megan and Tracie! You are super busy women, but manage to still give time to others.  Love you both.  xoxo

Congratulations! Graduation Cupcakes for Hank Mitsch!

Yes, Hank Mitsch… little Hank Mitsch that I used to nanny in college. My kid brother all-grown up!

I feel Spanx and Botox calling.

Mama Mitsch emailed asking us to attend Hank’s graduation and of course… had to order some cupcakes for his special event! Tyler and I were honored to be invited to his graduation, but really couldn’t make the ceremony with our crazy weekend in between the beach and Europe… and of course, baking/decorating dozens of cupcakes takes more time than I’d like to admit. I told DJ that I could definitely bring cupcakes and that we would be there for the afternoon celebration party!

DJ ordered Creme de Menthe, Cookies and Cream, and Chocolate with Vanilla/Almond buttercream frosting with little graduation caps, golf-theme toppers, and whatever else I thought would be creative. Hank’s school colors are green and gold, so I was super excited that even the Creme de Menthe cupcakes would match!

image

I always love being able to set up cupcakes for someone’s special occasion. You get great pictures AND are able to see all the cupcakes come together.

The pictures of them in the boxes don’t always give you the best idea of your final product.

image

Watch out! Crazy cupcake lady!

image

image

Jessica Mitsch (Hank’s beautiful older sister and my kid sister) took some great pictures of the cupcakes! We were lucky to have such a pretty day and Hank had wonderful turnout of family and friends.

image

image

image

Yum, yum, yum! These were definitely some of my favorites yet. The Creme de Menthe cupcake was amazing! I loved the chocolate/mint ganache on the top as an added flavor.

Happy Graduation Hank! Much love and luck to you at UNCW. I’m always here for you and cheering you along the way. The Mitsch family will always have a special place in my heart.

Happy 30th Birthday Megan Cupcakes!

image

M is for Megan McClure, one of my favorite ladies on this planet! When I moved to North Carolina from New Jersey in 1998, I was a junior in High School… not really caring what people thought of me, since I was heading off to college in less than 2 years… I made some of the most amazing best friends of my entire life.

Megan’s and my faithful meeting with in Anatomy Class with Ms. Mizel (sp?). What a crazy lady! She talked about her family having webbed toes, falling off swings and hitting your head only to go blind for a few seconds, and basically, we laughed at her the whole time. See, I can be mean too. One of the best things that she had decided that year was to assign Megan and I seats next to each other 2nd Quarter and we’ve been bosom buddies since.

I had been harassing Megan for weeks about her 30th Birthday plans… mainly for selfish reasons… I really wanted to make sure I didn’t miss out on her birthday celebrations with our hectic vacation schedule pending. Griffin, another one of my favorite people on this planet finally sent out an email with birthday shenanigan plans for the weekend in between our OBX and Europe trip. Yay, I could go!

Now, do you know what this meant?

1.)  I was fried from the beach - literally… from the sun, baked hundreds of cupcakes, broke down from saying good-bye to Beans, and dealt with a little family drama. What’s a family vacation without it, right?

2.)  I also had to come back from the beach a day early, but I had another cupcake order the next day, so it worked out for all parties.

Rosco and I packed our bags and loaded the car on Saturday morning, so we could get back to Cary… bake some birthday cupcakes… and head out to Graham.

My travels weren’t easy. I thought about Beans the whole time. My poor in-laws had to witness a breakdown over the phone when I asked if they would watch Rosco while we were in Europe.  I couldn’t fathom leaving Rosco in the house by himself with just a pet-sitter.

I arrived home safe and sound with seriously puffy eyes… only to remember that we had a broken faucet without water. Awesome baking scenario, right?

UGH, better get your sh*t together Emily.

What usually takes a couple of hours to bake 3 dozen cupcakes took almost 6 hours. I had to dig through my buckets from the beach with all of my baking supplies, deal with a broken faucet while running back and forth to the bathroom sink to get water, and try not to cry into my batter while I listened to our quiet house without Beans.

HOT MESS.

Hours later, I had cupcakes! Beautiful cupcakes WITH TOPPERS for my best friend that I couldn’t wait to see. There was nothing that would get in my way of of missing her special day.

Happy Birthday Megan!  You are an amazing friend and I love you dearly.  I’m looking forward to our 30s with more gray hair, wrinkles, and many more celebrations.

Congratulations Lauren and Aaron White! Happy Wedding Cupcakes!

My gorgeous cousin Lauren Edwards was married to handsome Aaron White on May 25, 2012 in Kitty Hawk at the Outer Banks North Carolina. Their ceremony was on the beach near the Kitty Hawk pier and the awesome couple was surrounded by their loving families and friends on an absolutely stunning evening.

image

I had the honor of being hired to bake and decorate their wedding cake and cupcakes! How cool, right?

Lauren and Aaron love chocolate and luckily enough have had several of my cupcakes at other family functions… like Olivia’s 1st Birthday… my other gorgeous cousin and Mama to Olivia, Amanda is Lauren’s little sister, so this family knows what’s up with cupcakes.

Over the couple of months before their wedding, Lauren and I talked several times about what she AND Aaron wanted. I thought this was super sweet that the two of them were equally involved in wedding planning. Aaron would jump on the phone with Lauren and he even had a calendar all filled out on his iPhone with wedding plans! Awesome groom, awesome husband!

They wanted flip flops, starfish, beach chairs, turquoise/teal, sand, chocolate, vanilla, cookies and cream, and SAMOA cupcakes! We went back and forth on ideas and on the morning of their wedding after a really tough 24 hours for me, this is what we’d like to call…

Happy Wedding Cupcakes Lauren and Aaron!

image

image

image

Thanks to Vinay Kolluru for his awesome photography skills. Check out that toasted coconut on the Samoa cupcakes! Lea’s job to watch and bake… she did great and the slight crunch on the top combined with a little chocolate ganache was perfect.

Our final plan for the cake was a Cookies and Cream cake crumb coated with Cookies and Cream frosting and filled with marshmallow creme. I pipped vanilla buttercream over the crumb coat to make the frosting look like several little shells all over… Then sprinkled the cake with crushed graham crackers. I pipped a teal watery bottom (aka vanilla buttercream dyed teal) to finish the cake then topped it with little beach chairs that Lauren had found, sand dollars, starfish, and FLIP FLOPS!

image

Sorry for my fat right finger on the right side of the picture… unfortunately, this annoyance gets progressively worse… haha, obviously Vinay didn’t take these pictures!

image

image

image

For the cupcakes, we finally had decided on vanilla cupcakes with a vanilla buttercream frosting dyed teal sprinkled with crushed graham crackers, cookies and cream cupcakes with a marshmallow filling topped with cookies and cream buttercream frosting, SAMOA cupcakes (chocolate cupcakes filled with homemade caramel and chocolate ganache frosting with a caramel buttercream and topped with toasted coconut and chocolate ganache), and chocolate raspberry cupcakes filled with a chocolate raspberry ganache.

I think I just wiped droll off my desk.

image

EKK, don’t you LOVE those sand dollars?!

A huge thank you to my sisters Nicole and Lea! The night that these toppers needed to be finished was the evening of Beans’ passing. I went to sleep with only 50% of the toppers completed and said a little prayer that I would get through the next day.

I work up at 5 am the morning of the wedding to find that Lea had finished the rest of the starfish and Nicole had finished the flip flops. Emotionally tears were streaming that morning. How lucky was I to have these two sisters in my life?

I’ve since been Ms. Emily Waterworks and as most of you know, I’m not much of a crier.

Well… this may have changed folks.  I can’t seem to stop these days.

Lea and I worked together that day baking, finishing sand dollars, delivering, and setting up! Attention companies everywhere: Hire Lea when she graduates.

I loved that we were able to be a part of Lauren and Aaron’s special day! Not only did they do such a great job putting their creative touches on everything, but also making sure to include family and friends in different aspects of their weekend… cake, cupcakes, music, and other wedding projects.

Congratulations to such a loving couple! Tyler and I wish you the best… Keep making out lots and lots and be sure to give extra smooches in public.

image

You know Tyler and I are all about that.

Love you guys XOXO

Happy Rehearsal Dinner Cupcakes Lauren and Aaron!

image

Aunt Lea loving on her Rosco-man! He is in LOVE with Lea and my sister, Nicole. They’re so gentle with him and he can’t get enough of them. So, a little sadness head’s up… I’ve probably been avoiding blogging about this baking week for one main reason, unfortunately the memories bring back the pain we’ve experienced since Beans’ passing away.

On Thursday, May 24th after losing our best friend in the whole world and loyal loving sidekick, Beans… I had already committed to baking my cousin, Lauren and her fiance, Aaron’s rehearsal dinner cupcakes for that evening.  What in the world was I going to do? How was I going to bake cupcakes let alone breathe?

Aunt Jane and Lauren stopped by our beach house that morning after they had heard we took Beans to the vet at the OBX. As soon as they found out what had happened, Lauren asked me to not worry about the cupcakes and to just take it easy.

I knew I had to bake to stay sane. I was so numb that I couldn’t comfort myself let alone my husband. I wanted to bake cupcakes and to celebrate life. My gorgeous cousin, Lauren was getting married the next day and Beans always loved a good party… and a cupcake.

“Lauren, I’m baking your cupcakes and you’re getting married tomorrow! I need to do this, because I don’t know what else to do with myself.”

She gave me a huge hug and told me that she loved us.

I started baking as soon as I could that morning. I couldn’t concentrate on anything. I threw away 3 batches of chocolate cupcakes, because I would forget an ingredient… bake them… then pull the cakes out only to notice that they felt like rocks or didn’t rise.

I never forget ingredients.

Finally, I asked that my siblings go to the beach and not to worry about Tyler and I… my poor family didn’t know what to do with us that day. They realized that we needed comfort and that I probably needed the extra hands in the kitchen, but since I couldn’t even focus on one recipe, we just needed quiet.

I cried the whole time while baking that afternoon. I couldn’t stop. All I could think about was Beans and that she wasn’t there.

I had read a Spanish novel in college and unfortunately the name slips my mind that was about a woman who baked for her family every evening. She wasn’t able to marry the man she loved, so would cry every evening while she baked desserts and cooked dinner. Her family noticed the change in her food and that she didn’t put love into it anymore.

Well, I wasn’t going to let that happen!

I pushed through… pulled it together… Lea helped me with “W” fondant toppers… and 4 dozen cupcakes, 7 hours later (that usually only takes me 3)… I had beautiful cupcakes!

image

image

image

image

Chocolate and Vanilla cupcakes with Vanilla and Strawberry frosting topped with little “W”s… Chocolate Guinness cupcakes with Jameson ganache filling and Bailey’s Buttercream frosting topped with Jameson ganache drizzle.  YUM!

Vinay actually captured some amazing photos that afternoon. Even some very somber ones that he posted on Facebook, but I’m very grateful for his attention to detail and that he took pictures that day.

image

image

image

After celebrating a wonderful occasion, receiving amazing feedback on the cupcakes and lots of love from our family… Tyler and I left the rehearsal a little earlier than we normally would. We were so emotionally drained and exhausted that we couldn’t be our normal little social butterflies. We smooched gorgeous Bride-to-Be, Lauren and her handsome, Husband-to-Be Aaron and hand-in-hand went home to our beach house.

We knew that Beans would have been proud.

Extra Batter? What to Do?

Bake a cake, practice some piping techniques, and send everything to Earth Fare!

image

image

And, I’m obsessed with strawberries right now, since they have been in season in North Carolina.  I’ve already braced myself for depression since with my next visit to the NC Farmers’ Market… I know they won’t be waiting for me… because it’s PEACH season now!

image

image

Ohh, and let’s not forget the extra cupcakes! Of course, sometimes when baking I end up with a few extra… somehow, I had way too many Cookies and Cream cupcakes after baking Kendal and Wes’ wedding cupcakes.

Usually, when I have extras like this, I like to sell them quickly on Facebook at a “get them out of my house, before I gain 5lbs” price, but since I had to deliver the wedding cupcakes at 5pm… it was really too late to advertise them.

So, lucky Earth Fare Brier Creek!

image

image

Surely Tyler is working them to death, so at least I can treat his co-workers!

Happy Thursday Evening!  What’s for dessert???

Roses! Kendal and Wes' Wedding Cupcakes.

To my surprise in March one of my co-workers and friends Ryan Coble called me to say that he had a friend who needed wedding cupcakes for their upcoming May wedding.

“Really???”

“Yes, I gave her your number. She’ll call you. She really loved the Apple Cider Cupcake.”

“That’s awesome! THANKS!”

So, we know how this goes sometimes in sales. Unless, YOU have their number, most of the times… you don’t hear from that customer or account, etc., but I was still super pumped that this was even a possibility.

A few weeks went as Wisdom and I prepared for a huge survey with Red Bull and I started to forget about this possible Alamance County cupcake order.

Finally on my way to meet with a sales representative in Raleigh to run through our downtown accounts before Red Bull came, I received a call from an unknown number on my cell phone… on the other line, was the sweetest voice ever… Miss Kendal Spoon.

Kendal gave me a quick rundown of their wedding and theme. She was really open to whatever ideas I had and we ended the conversation with the plan that I would meet her in Burlington one day before the wedding to finalize everything.

I’ve never met a bride more in love with their fiance than Kendal. She made sure that Wes had his favorite cake combination and otherwise, she was really just interested in CHOCOLATE and ROSES.

A girl after my own heart!

image

image

image

We decided on Cookies and Cream cupcakes with a marshmallow filling frosting topped with Cookies and Cream buttercream!

image

image

image

Classic Vanilla with a Vanilla buttercream frosting!

image

image

image

A traditional chocolate cake with a dark chocolate frosting!  And, for a few minutes we were stumped for a 4th flavor combination.  As I sat at Starbucks with Kendal, a little lightbulb went off… I remembered that she had ordered a caramel drink…

“Kendal, I know! What about a chocolate cake filled with sea salted caramel topped with a sea salted caramel buttercream drizzled with chocolate ganache?”

“Umm, YES!”

Duh, one of my favorites! Boom! Here she is!

image

image

image

The couple’s cake topper was actually a confetti cake with vanilla buttercream frosting.  Apparently it’s the groom’s favorite, so we included it just as a special surprise for him.

image

image

image

Kendal had plans to carry roses on the day of her wedding, so our idea of putting them on the cupcakes was perfect! We decided that a neutral color like nude or cream would be the best to match her wedding theme.

Question: Have you ever made marshmallow fondant roses?

Nope?

Well, you definitely should. You’ll always appreciate the roses or flowers on the next wedding cake you eat. I was only able to make an average of 8 roses an hour and since I work full-time and have a long list of responsibilities, I had to hire my sisters, Nicole and Lea to help me make these gorgeous roses.

I am eternally grateful for their help, because I would never have finished on time.  Once I showed them how to put these little roses together, they were my rose slaves for several days hours.

Lea even went with me to drop off the cupcakes and set them up on the tier that Tyler and his father made just for this wedding and my cousin’s, the weekend afterwards.

image

Can you tell? I was one happy crazy cupcake lady after we finished toppers, baked cupcakes, decorated, AND made it on time for the wedding in McLeansville.  I only got 2 or 3 hours of sleep that night, but I was one proud exhausted woman.

CHEEEESE!

image

And, look who also was pumped about her first job as a crazy cupcake lady’s personal assistant?

image

image

So much fun to make!  I just wish that I had more time to put towards toppers during the week.  They look absolutely amazing, but I really have to plan them into my evenings appropriately.  They definitely make the cupcake or cake and always match the theme of the party!

Ohh, and you have to check out some of the photographs from Will Page of Kendal and Wes’ cupcakes. Wes was kind enough to share his images of the wedding cupcakes with me, so I wanted to share them with everyone and show off his work! Here’s his website if you are looking for a local photographer for an upcoming event:  www.willpagephoto.com

image

image

image

image

image

image

Congratulations Kendal and Wes! Thank you for inviting me to be a part of your special day. I wish you lots of shared cakes and cupcakes followed by happy memories and huge smiles. Always remember to kiss each other goodnight and a little sugar always makes it better.

Part 2: Culinary Research European Style!

image

After our city tour of downtown Freiburg, we had a 2pm date with a local, small, family owned white asparagus farm and winery, Vorgrimmler:  http://www.vorgrimmler.de/.

Tyler’s and my playground! Whoopie! We’re huge foodies, health nuts (except for the occasional cupcake) love wine, and enjoy learning about the history of our food and where it comes from. White asparagus is an early spring crop in Germany and easily found ANYWHERE this time of year.

Both green and white asparagus are the same species, however the growth characteristics are rather different. Growing white asparagus is quite an intensive process that usually takes 3 years until the first harvest. Apparently farmers need to wait until the plants flower twice then hope for a warm spring in the 3rd year.

As most of you know, WE LOVE ASPARAGUS at this house, so I was a good little student taking mental notes… plus the land was so gorgeous, how could you not pay attention?

image

image

image

Once Marion introduced us to the family that lived on the winery and the few employees that worked the land, it was tasting time!

Be sure to check out Lea’s face.  Classic.

image

(Below) The owners (the couple to the right) and Marion’s friend (the woman on the left) spoke for several minutes about their backgrounds and farm practices.

The owner, Klaus Vorgrimmler (found here in this older YouTube video: http://www.youtube.com/watch?v=gWpoXEgaNb0) is a huge advocate for sustainable agriculture.

image

He only takes from the land what he gives. They don’t use chemicals, process almost everything by hand, are careful to till or irrigate without adequate drainage, and replenish the soil, so that it will be fertile for generations to come.

By doing this, they are able feed local restaurants and families, enhance environmental quality, efficiently use non-renewable resources, and sustain the quality of life for farmers… and most importantly, society.

This way of farming is a dying methodology… expensive, costly, and results in more labor and time, however extremely important if our great-grandchildren plan to have farmlands and eat healthy.

image

image

image

image

Not only did Klaus talk about asparagus and their farming methods, but he also spoke about his passion for wine. They produce several different types of varietals; burgundy, pinot noir, chardonnay, cabernet blanc, pinot blanc de noir (saignee method), and bubbles!

image

Klaus showed us his red wine cellar, which he seemed most proud of… creepy little basement with spiders, but at the same time… the most beautiful wine barrels with yummy juice waiting for us to try.

image

image

Klaus and his wife make their own honey!

image

And, allow their friends to use their community garden!

image

image

Perfectly complete with little wild strawberries that taste like little candies.

image

image

And, of course a J. Crew photoshoot with Hayden and Nancy!

image

image

Klaus and his wife took us for a short tour on their land to also see their apple orchard and vineyards.

image

image

After a good hour or so of granola heaven, this gorgeous table full of food awaited us in the tasting room.

image

White and green asparagus wrapped in prosciutto and ham, polenta cakes, radishes, cheeses with an asparagus jam, water with mint… and most importantly, wine!

The asparagus jam was my favorite!  Almost like a Pepper Jam… a little sweet/spice combination.

image

image

And, of course… we can’t forget dessert!  An assortment of German chocolate.

Yes yes yes!

image

image

After letting our food and wine settle, everyone walked around the farm and relaxed before our bus ride home.

Dani and Davis laid out of the driveway, Nancy and Hayden reassured an employee of Klaus that we didn’t need glasses of wine for the bus, but we would cork an open bottle for consumption later, and Nicole, Lea, and Vinay were making friends with the Vorgrimmler 15 year old farm kitty, while everyone else prepared for their trip back to our humble abodes.

image

Ok, ok… I lied.  Nicole made friends with the farm kitty.  She made friends with EVERY cat that we saw in Europe.

Someone needs a pet!

In closing, Tyler and I had a very special time at this farm. The owners reaffirmed why we spend more money on healthy food than the average American… why Tyler works at Earth Fare… that we make sure to buy all-natural and organic when at all possible… and otherwise, take care of the land… recycle, reuse, replenish.

When leaving the farm, I could have sworn we were in North Carolina.  :)

image

Eat local.  Buy local.  Be sure to support NC farms!

XOXO

Part 1: Culinary Research - European Style!

image

My first day in Freiburg Germany! Completely jag-legged, but happy as can be with a huge bottle of water and free roses from the local florist. I have to say, I’m missing walking everywhere AND most importantly, my daily German schoko-croissants.

Yes, chocolate croissants… I’m having serious withdrawals from not devouring them every morning. They were amazingly delicious and surprisingly, I didn’t gain a pound in Europe.

Walking people. What a thought! Exercise really does work even in its most minimal form.

I’ve really wanted to blog about Europe since we flew home on Wednesday, but haven’t had two seconds to sit down and breathe. I went right back to work on Thursday and baked into the weekend.

Our vacation to Europe was much needed. I was disconnected from phone calls, text messages, work, drama, household repairs, and only had the random connection to Facebook and email. I was able to sleep, walk, enjoy life… and just be. For Tyler and I, we really needed this time to ourselves. We enjoy spending all hours of the day together especially traveling and discovering new countries… great time to refresh, renew, and snuggle.

We flew into Zurich Switzerland at 7:45 am last Wednesday; meaning that we basically didn’t sleep and quickly we were already faced with another day. We refused to waste anytime in Germany and fought off all thoughts of returning to our flat to sleep.

My hunt for Red Bull began!

I knew Germany was one of the top Red Bull consuming countries, so I was sure to find Sugar Free somewhere. While searching for my sparkly little light blue can, I discovered the NEW Red Bull flavors at a little grocery market in between our flat and Marion’s house.

Super jet-lagged? Perfect timing to try all 3.

image

image

Introducing Lime, Blueberry, and Cranberry! Apparently several countries and Florida are tester markets distributing these flavors to see how they sell before launching them to the rest of the States and World.

My food and baked goods market research started!

Lime - tasty, but I really like the taste of normal Red Bull, so my results may be a little jaded.

Blueberry - too sweet, but I don’t drink soda or juice, so who knows.

Cranberry - amazing.  Try it as soon as you can!

Did they work?

Yes, I felt out of it, but had full-energy until 8pm that evening with only an hour of sleep on the plane.

Go Red Bull!

Trying new foods, drinks, and desserts was a huge priority while in Europe. What’s the point of going if you don’t stretch your stomach limits and open yourselves to new cultural experiences?

Germany is known for their pastries, bread, pretzels, meats, fish, beer, and wine… and of course, one of our first stops was the…

Biergarten! Luckily enough, Hayden, Nancy, Lea, Dani, and Davis stayed at the hotel above, so we met here quite often. Not always to grab a beer, but this location was in between the apartments where Nicole, Vinay, Aunt Marilyn, Uncle Hank, Tyler and I stayed and Marion’s house… nice pick Marion.  :)

image

image

Guess who was legal in Germany and loving it?

Come on, you really only have one choice.

image

On Thursday, we had a group tour of downtown Freiburg, which was a great introduction to the city that we would be living in for almost a week.

Walking along the crowded streets there were amazing smells, sites, and sounds… children playing in the water ways, couples enjoying espresso, tourists snapping pictures, and bakeries on every corner.

Marion made sure we saw the bakery exhibit at one of the town buildings. I think it was the bank that had displayed these cakes and displays, but it was neat to see some of the work of the pastry chefs in the area.

image

Of course the best part was when we stopped at a little chocolate shop, Confiserie Rafael Mutter and shared some little treats.  I wish I had taken a picture, but I was busy stuffing the desserts in my mouth, so that no one else could try anything.

Oops.

Biergartens are very common restaurant spots in Germany. During our city tour on Thursday, we ate at another one in downtown Freiburg, Hausbrauerei Feierling which was established in 1989 and replaced an older brewery that had been open since 1871.

image

image

image

Although, Nancy, Vinay, and Nicole weren’t a fan of their meals, which were basically piles of cheese to dip bread into… the rest of us enjoyed our lunches and beers.  The pretzels were probably my favorite part! I felt like I was at Flying Saucer in Raleigh only missing some certain good friends.

Just a little introduction into my culinary experience in Germany. Those chocolate croissants make me want to open a bakery like tomorrow.

Süße Träume (sweet dreams… hopefully if my translation is correct) and Guten Abend!  More to come this week.

XOXO

Volcano Cupcakes!

Susan Heuser is such a good little cupcake orderer! Her boyfriend’s daughters were turning 7 and they wanted to throw the girls a luau party.

We thought about flip-flops and hibiscus flowers and somehow the idea turned to exploding cupcakes. I had to gently explain that I couldn’t do that entirely with the cake, but the frosting could be molded in different ways.

Susan had one more little request… no Red Dye #40.

Now, how was I going to do that? It was Wednesday before their Saturday party… I tried to order through a few vendors on Amazon, but no one could guarantee delivery by Friday night. I spent hours on Thursday looking for all-natural food dyes… Whole Foods, Earth Fare, Walmart, Harris Teeter, Fresh Market… so, my last resort was to start researching other ways to dye the lava (aka marshmallow creme).

Beet juice! I’m not going to lie, I threw away my first batch of marshmallow creme when I dyed it with the beet juice. People on the internet are liars. You can definitely taste the beets in the creme and I put WAY to much in my batch thinking that it didn’t have much flavor.

With my 2nd batch, I cautiously added a few drops of beet juice at a time until I had a slightly orange-red color without compromising the taste.

image

I added little blossoms to the volcanos for the girls… and shaped the frosting like volcano peaks.

image

The classic chocolate cupcakes with vanilla buttercream looked amazing with its chocolate ganache pouring out of the top. Almost like an ice cream sundae!

Get in my belly! I’m obsessed with ganache these days… I put that SH*T on everything.

Thank you Susan for all of the support! Hope the girls had the best birthday!

My partner in crime, Megan McClure… aka the awesome, not extremely patient girl who helped get me through High School and unsuccessfully attempted to make sure I was on time for events…

Yesh, at least I wasn’t hours late!  I‘m officially much more reasonable about being on time.

Poor Megan. I’m sure she just wanted to throw me out of her little Black 90s Honda Accord those days.

Ahh, memories.  Good thing, that Megan loves me…  And I love her lots and lots and lots.

Sorry for the tangent, I needed an intro for these amazing little OWL cupcakes that Megan ordered for a baby shower she was hosting a few weeks ago.

Chocolate cake filled with marshmallow yumminess topped dark chocolate frosting and drizzled with marshmallow creme… classic chocolate cake with an almond/vanilla buttercream frosting…

Vanilla cake with vanilla/almond frosting… and of course, since it’s strawberry season in North Carolina… vanilla cake with strawberry buttercream! YUM!

LOVE these owls! LOVE the colors! Very Anthropologie and apparently the colors of the nursery. So cute!

I was actually very lucky to meet the gorgeous Mama-to-Be and recipient of these cupcakes this past Saturday in Graham, Jennie… Good luck in the next few weeks! I know you’re getting excited!

xoxo
